To prepare this dish, you will need: 6 centiliters of olive oil; 1 onion peeled and cut into cubes. 1 clove of garlic, peeled and crushed; 200 g of medium or long-grain rice; 1 tablespoon of finely chopped wild fennel or dill leaves; 500 g fresh spinach, washed and coarsely chopped; A dash of lemon juice if you’d like, a little feta to accompany.
Pour the oil into a saucepan over a medium heat. Fry the onions and garlic until soft but not coloured. Add wild fennel or dill leaves and continue to cook until they taste better. Add the rice and mix well to coat each olive oil. Add spinach and 37.5 cl of water. Stir constantly until the spinach wilts, put a lid on and let it simmer over low heat. The rice should cook in about 12 minutes, but check it carefully. If it’s too wet, remove the lid and turn up the heat to help evaporate; If it dries out, on the contrary, add water during cooking. pepper salt. Add a dash of lemon juice. Serve with feta cheese.
