The royal couple shared their brunch recipe on their social media.

May 2020 saw the first edition of ‘Big Cheese Weekender’, an online festival promoting British cheeses. The event is organized by the Cheese Academy, an association established to support cheese makers and the industry.

Charles III, patron of the Specialized Association of Cheesemakers and Big Cheese Lovers, took part in the festivities. Via Clarence House, the royal couple’s former account on Instagram and Twitter, the King shared one of his favorite Sunday brunch recipes and his wife Camilla’s specialty: an egg gratin with cheese (British, of course). A simple and easy dish but above all accessible.

Egg gratin with cheese recipe

Preparation: 5 minutes
Cooking: 8 minutes

for one person

  • butter
  • 100g baby spinach
  • 100g cherry tomatoes or dried tomatoes
  • 35g soft, hard cheese (such as Tunworth, Golden Cenarth, etc.)
  • 15g grated hard cheese (old Winchester type)
  • chopped fresh basil leaves
  • charcuterie (optional)
  • 1 egg
  • 80 ml fresh cream
  • salt pepper

Butter a small gratin dish.
Spread the spinach in the bottom of the dish, leaving a gap in the middle.
Quarter the cherry tomatoes or chop the sun-dried tomatoes. Sprinkle them over the spinach.
Cut the soft cheese into cubes and place them in the gratin dish. Add chopped basil.
If you choose to include the charcuterie, add that as well. Season with salt and pepper.
Crack an egg in the center of the dish without breaking the yolk, then cover with fresh cream.
Sprinkle with grated hard cheese and bake at 180°C for 8 to 10 minutes.
