Originally, French toast allowed the use of stale bread, either in the idea of the zero-waste movement, or because of the need for food not to be wasted, or because throwing away bread, with its religious connotations, is socially unacceptable. The basic recipe is very simple (a slice of bread soaked in a mixture of milk and eggs), the magic works with added spices and toppings: caramel sauce, chocolate, mountain berries, cinnamon, chopped almonds, jam, etc. . The base is easy to get by: eggs are whisked and mixed with milk and sugar for a crusty and caramelized side. Stale bread is cut into slices and the slices are dipped in this preparation. Then it is cooked to brown it.

We don’t necessarily know that, but for perfectly golden French toast, soaked with firmness, slightly crunchy on the outside and mushy in the middle, there are proportions to respect. 2 eggs, 150 ml of milk, 2 tbsp. in s. of sugar, maybe vanilla, and a pinch of salt for four small slices of small square bread. There is no point in soaking the bread excessively, it will damage the recipe. Feel free to add a teaspoon of extract: vanilla, cinnamon, almond, allspice, cinnamon, nutmeg or allspice on top. Delicious French toast is also possible and is an easy and practical recipe to make if you are lazy and want a quick dinner or a smart TV.

What bread? What is cooking?

Sandwich bread, brioche bread, brioche, raisin or walnut bread, country bread and even milk bread, everything allowed! The ideal option is to choose bread with narrow crumbs, so that it absorbs eggs and milk well. Prefer hard, stale bread. For very tender crumbs and a crunchy edge, make nice thick slices. You can choose the egg-free version. Add 1 tbsp. in s. Filled with mascarpone in hot sweetened milk and a drizzle of honey.

A completely non-dairy version based on plant-based milk is accessible, from sweet and flavored coconut milk to thicker milk such as chestnut or almond. Cooking is done in the pan or in the oven. In the first case, as soon as the pan is hot, add an amount of butter before placing the soaked French toast in the mixture. Brown on both sides for a few minutes. For baking, preheat at 180 degrees, lining up slices of plain bread in a gratin dish before covering them with the milk and egg mixture. Leave to rest for a few minutes and then bake for 20 minutes, watching the cooking. You will have more bread pudding or a light cake. This version is perfect with a scoop of ice cream and custard.

It’s easy to add crunch to French toast. Dip each slice in the egg and milk mixture before squeezing it in panko (Japanese breadcrumbs) or cornflakes. The first possibility will give a finer result that works well in the case of salt like coconut powder for an exotic touch, and the second will bring you a real, delicious crisp with jam and yogurt with maple syrup or pralines.

Disgusting, not even afraid

To enhance the spicy flavour, for example French toast with cardamom, replace the milk with cream. Fats are a carrier of flavors that will give much better results. Count 100 ml of cream per egg. Bring the mixture to a boil in a saucepan before adding the spices and let it steep for 2 hours away from the heat. Simple and delicious French toast can be made on a Parmesan base. You need 30g of Parmesan cheese for every two eggs. Beat eggs with cheese, season and add milk. Dip your slices in the mixture and cook them in a buttered skillet. Nice and quick with a salad with tomatoes and sun-dried olives. Serve delicious French toast with walnut arugula and smoked trout; Fresh tomatoes and tapenade. Some raisins and kumite.
