- 4 eggs + 2 eggs for breadcrumbs
- 300g sausage meat
- 1 tbsp. mustard
- 1 bundle parsley
- Salt and Pepper
- 50 grams of flour
- 100 gm bread crumbs
- frying oil
Bring a pot of water to a boil. Boil 4 eggs in them for 4 minutes, then immediately dip them in ice water.
Once they cool, peel them.
Chop the parsley. Mix it with minced meat with mustard, then season.
Cover each egg with sausage meat.
Beat the remaining eggs.
Roll eggs cooked in succession with flour, beaten egg and breadcrumbs.
Heat the oil to 180 ° C, and cook the rusk eggs for 3 minutes for a liquid yolk, or 6 for a stronger yolk.
Drain it on absorbent paper before serving.
If you have whisked the eggs and the breadcrumbs remain, bake the eggs a second time before frying.
