How to cook prime rib for Christmas in 7 easy steps

Whether you’re gathering with your loved ones after a holiday in 2020 or you’re still hanging out on your own this year, the delicacies that are usually eaten every year after all the gifts are unpacked are definitely still big. Part of the holiday – including those that form part of Christmas dinner.

For some, that might mean turkey or pork, but for others, the main roast is what makes their holiday perfect. Fortunately, whether you’re cooking for a hundred or a hundred, there are plenty of useful recipes that will make it easy for you to enjoy your traditional holiday. You will need the following items:


  • 5 lbs. beef rib
  • sea ​​salt
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons fresh rosemary
  • 1 teaspoon fresh thyme
  • 8 cloves minced garlic
  • Half a cup of olive oil
  • Optional: horseradish, to serve

Roast preparation:

Before cooking, you need to properly prepare the roast to make sure it is cooked properly. Take it out of the fridge an hour before cooking and season with salt on all sides. Cover it with a plastic wrap. It should come close to room temperature before cooking.

Step by step recipe:

1. Lower/adjust oven rack to allow meat to cook in the middle of the oven, then preheat to 500°F.

2. Mix 1 teaspoon salt, pepper, rosemary, thyme, garlic and olive oil in a bowl and set aside.

3. Pat the roasts with paper towels, then pour the seasoning mixture over them with the spoon, rubbing them on all sides. Place a grill piece with the bones inside the grill pan. If cooking boneless roast, place it on a rack inside the skillet.

4. Bake at 500 degrees for 15 minutes.

5. Reduce oven temperature to 325 degrees and continue cooking, allowing an additional 10-12 minutes for a pound for a rare pound or 14-15 minutes for a medium pound. If cooking over medium heat, cook until thermometer reaches 150 degrees Fahrenheit.

6. Once the roasting has reached the desired doneness, remove from the oven and tent with foil. Leave it to rest for 30 minutes before carving.

7. When ready, cut by slicing against the grain, about an inch thick. Serve with horseradish if desired.

Oven cooking times:

Cooking time on all types of meat can vary by size, including roasted rib, but the USDA Food Safety and Inspection Service advises the following roasting times.

  • 4-6 pounds roasting with the bone: 23-25 ​​minutes per pound
  • 4-6 pounds boneless roast: 28-33 minutes per pound
