Enough for 4 to 6 people

20 grams of sugar
50 gm butter

  • Shortbread Ingredients:

200 grams of flour
1 egg yolk
4 cl of water
2 pinch salt
100gm soft butter

  • Lemon Cream Ingredients:

250 gm lemon juice
250gm fine sugar
10 eggs
25g of cornstarch
100 gm butter

  • Meringue Ingredients:

3 large eggs
150 grams fine sugar

Prepare a short dough by mixing all the ingredients in a stand mixer or mixing bowl, until you get a homogeneous paste.

Roll it out to form a circle with a rolling pin and set aside in a greased and floured pan. Bring the edges a little inward and remove the excess dough. Prick the bottom of the pie with a fork to prevent it from puffing up while baking. Add bread granules or beans and cook for 20 minutes at 200 ° C.

Meanwhile, heat the lemon juice in a saucepan. In a bowl, break the eggs and beat them, then add the sugar and mix well, then pour in the cornstarch and mix again.

Put this mixture in the saucepan and cook over medium heat, whisking vigorously, until the preparation thickens, then add the butter, stir everything and let the preparation cool in the refrigerator.

Then prepare the French meringue. To do this, beat the egg whites with an electric beater or a food processor. Gradually increase the speed. When the eggs become foamy and therefore not beat much, add the first half of the sugar. When the whites are firm, add the rest of the sugar and continue to whisk the meringue.

Once the lemon cream has cooled, pour it into the pie crust. Place the meringues in a plain or fluted bag and dot the top of the pie. Feel free to leave small points for dilution.

Flambé meringue with a blowtorch and then lemon zest over it. You can let it rest for some time in the refrigerator so that the lemon cream takes better.
