Bom Bocado is a Brazilian sweet made of eggs and coconut flavored with tonka beans, the perfect scent for an exotic dessert.

Focus on the tonka bean

This recipe is made with organic tonka bean. The pulp of the sacred cumaru tree reveals all its aroma after drying. Its amber, honey and almond leaves, very greedy and round, offer great potential for uses, particularly in pastries. Vanilla and caramel flavors are ideal for sweetening chocolate, fruit salads, jams, compotes and ice cream.

Delphine Bocard’s recipe for cooking

to prepare

  1. Preheat the oven to 180 degrees, alternating the heat.
  2. In a bowl, whisk eggs with sugar. Then add the grated coconut.
  3. Add the sifted flour and baking powder. mix up. Finally, add the grated tonka bean, salt and soy milk. Mix well.
  4. Transfer the preparation to a small square or rectangular mold that has been previously greased or lined with baking paper.
  5. Bake for 30 minutes. Check for doneness: the tip of the knife should come out dry.
  6. We take it out of the oven and let it cool before cutting it into squares. It’s ready to taste!


  • 4 organic eggs
  • 90gm organic cane sugar
  • 100gm shredded organic coconut
  • 50gm organic wheat flour
  • 1 teaspoon instant yeast
