Delphine Bouchard’s recipe for cooking

  1. Cut the onion into slices after peeling it. In a frying pan, heat the oil over high heat and fry for a few minutes.
  2. Add tomato coulis, cooked organic sweet pepper and thyme. Simmer on low heat for 5 minutes, stirring regularly.
  3. Remove from heat and add Parmesan cheese and drained and crumbled tuna. mix up.
  4. Heat the oven to 200 degrees.
  5. Place the first pie dough on the work surface. Using a cookie cutter or upside down cup, cut the dough into a circular shape with a diameter of 10-12 cm.
  6. In the first circle, put 1 tablespoon of the tuna filling in the center, seal in a half-moon shape, and press well. Repeat the process until the ingredients are used up.
  7. Place the rolls on the baking sheet. Using a pastry brush, brush them with the egg yolk and milk mixture.
  8. Bake the empanada in the oven (preheated to 200 degrees) for ten minutes. It should be golden in colour.


  • 2 rolls of organic puff pastry
  • 1 organic onion
  • 1 drizzle of organic olive oil
  • 20 cl of organic tomato coulis
  • Half a teaspoon of organic thyme leaves
  • 40gm grated organic parmesan cheese
  • 200g canned tuna
  • 2 teaspoons cooked smoked organic paprika
  • 1 organic egg yolk
  • 1 tablespoon of organic milk (animal or vegetable)
