Penne with zucchini and pesto chorizo ​​recipe

Ingredients for 4 people:

  • 2 zucchini (± 550 g)
  • 65 grams pine nuts
  • 70 gm parmesan cheese
  • 1 clove garlic
  • 150 grams chorizo
  • 420 g penne
  • fresh basil
  • the salt
  • pepper

Prepare :

  1. Wash the zucchini and cut it into small pieces. Fry ¾ in a skillet over low heat with
    Drizzle olive oil and a little water for 10 minutes. Season with pepper and a pinch of salt.
  2. In a frying pan, brown the pine nuts for a few minutes.
  3. Mix the zucchini, garlic clove, pine nuts and Parmesan using a blender until you get a smooth and creamy pesto. Season with pepper and a pinch of salt.
  4. Boil water to cook the pen.
  5. Cut the chorizo ​​into thin slices.
  6. Meanwhile, fry the rest of the zucchini pieces along with the chorizo ​​slices until crispy.
  7. After the pasta is cooked, mix it with the pesto and chorizo ​​mixture. Finish off with a few pine nuts and fresh basil leaves.
