Pocket Recipe – Chicken Stew

Chicken broth grilled the way we love it in West Africa with the help of okra to roll. This is an episode of pocket recipepodcast from Taste of the world.

Serves 4 people – prepare and cook for 30 minutes


4 chicken thighs – 1 onion – 1 garlic clove – 1 bay leaf – 2 carrots – 8 potatoes – 3 fresh okra – 2 tablespoons of olive oil – a little butter – salt and pepper

Wash the vegetables and peel the potatoes without cutting them.

In a saucepan, heat 2 tablespoons of olive oil and saute the chopped onions for 2 minutes, then add the chopped garlic. Let the brown color.

Add chicken thighs and ingredients (bay leaf, chopped carrots, and potatoes). Cover with water and bring to a boil.

Salt (not much), pepper, cover and cook for 20 minutes over low heat.

Add the ground okra, then cook for 6 minutes (the okra helps bind the broth).

Remove the chicken thighs.

In a frying pan, melt a little butter and brown the chicken thighs vigorously (this coloring will bring the roasted taste). Adjust broth seasoning. It’s ready, enjoy!
