It was founded at the end of the 15th century, between 1477 and 1479. According to tradition, the Virgin appeared on a strong hawthorn to two shepherds in 1399, during a radiant spring. She would tell them that she wanted to have refuge there, because many Christians were martyred there during the Muslim invasion. “I will tell you that it is the will of my glorious Son that a monastery be built here under the command of Saint Benedict,” she would say to them.

It is also said that during the Muslim invasion, the nuns had to hide the image of the Virgin underground so that it would not be destroyed. Years later, the painting was found and a hermitage was set up in this place on which the monastery was later built. And this nut cake recipe, his specialty, is taken from the book Monacal Kitchen.

Ingredients : 200 g of butter 300 g of sugar 200 g of flour 150 g of walnuts 4 eggs; 1 cup of rum 1 teaspoon of baking powder (or baking powder); 2 pinch salt.

Prepare :

1. In a bowl, mix the softened butter with the sugar using a wooden spoon or a whisk. When the dough becomes foamy, mix 4 eggs one at a time with small portions of flour until you add 200 grams. Then, continuing to mix vigorously, add 2 pinch of salt, drop rum, chopped walnuts, and yeast.

2. Stir the mixture until smooth. Be careful, this is the most important step for dessert success.

3. Grease the mold with butter and sprinkle it with flour. Pour the mixture and bake in the oven for about an hour.

4. Before you take the cake out of the oven, make sure it is well cooked by inserting a stick. If it comes out clean, it’s ready.

The ideal mold for making a cake is the one in which the dough is at least 3 cm thick.
