Prepare : Mix 4 or 5 apricots and lots of nuts. Cut the garlic and herbs. Arrange these ingredients, along with cranberries, crushed pistachios, poppy seeds, and paprika…in different glasses. Cut the fresh goat cheese into a large bowl and mix it. Form a few balls 2 to 3 cm in diameter. Cover it by rolling it into the dish of your choice. Place in the refrigerator for about 30 minutes, until the cheese has hardened. They installed appetizers skewers on the balls and served them.

Goat cheese and spinach tart

Ingredients : Puff pastry, 400g fresh spinach, 200g goat cheese, 75g grated goat cheese (from Tommy goat cheese), 3 eggs, 1/2 cup fresh cream, salt and freshly ground pepper, a little butter.

Prepare : Wash and cook the spinach in salted boiling water. In a bowl, mix eggs, cream, salt and pepper. Spread the pie dough and describe the pie tray. Put the pie crust in the oven for a few minutes. Strain the spinach. Garnish the bottom of the pie with spinach. Goat cheese crumble. Pour the egg cream mixture. Sprinkle with grated goat cheese. Put a little butter and bake for 30 minutes in a preheated oven at 210 ° C.

Tiramisu with red fruits

Ingredients (for 6 people): 200 grams of strawberry syrup, 3 eggs, 100 grams + 2 tablespoons of fine sugar, 1 bag of vanilla sugar, 400 grams of finger biscuits, 250 grams of mascarpone and 200 grams + 500 grams of strawberries.

Prepare : Start preparing strawberry syrup: mix 200 grams of strawberries with 100 grams of sugar, add 200 ml of water and 1 tablespoon of vanilla extract. Boil until it thickens and leave to cool.

For mascarpone cream: Take the eggs and separate the white from the yolk. Mix the yolks with 2 tablespoons of sugar and vanilla sugar until you get a foamy mixture. Gently add mascarpone. Beat the egg whites until stiff and gradually stir into the cream.

Dip the biscuits in the strawberry syrup and line the bottom of a glass or earthenware mold with the soaked biscuits. Cut 500 grams of strawberries into slices. Arrange a layer of strawberries on the biscuits. Then cover with half the amount of mascarpone cream. Arrange a new layer of strawberry-soaked biscuits and immediately top with strawberry slices and cream. Refrigerate overnight and garnish with strawberries, grated chocolate, or cocoa powder before serving.
