For a dozen pancakes, you will need: 500 grams of hard potatoes, 1 egg, 1 tablespoon of flour, 2 leeks, a little vegetable oil, a few sprigs of parsley, spices, salt and pepper.

After peeling and cleaning the potatoes, grate them and let them dry with kitchen paper. Rinse and chop the herbs. Peel and cut shallots. Add it to the grated potatoes with the beaten eggs and flour. Season with salt and pepper, then mix. You can also flavor your preparation with a touch of your favorite spices: turmeric, cumin, nutmeg, coriander…

In a large skillet, heat a large drizzle of vegetable oil. For perfectly round pies, choose a metal cookie cutter in the shape of a circle. Otherwise, in the traditional way, put the small domes into the brewing bowl with the spoon, and gently set. Cook for 5 to 8 minutes on each side over medium heat.
