Pavlova’s bizarre recipe from MOD
To prepare the lime meringue
- 100 gm egg white
- 100gm powdered sugar
- 100 grams fine sugar
- 1 lemon
exotic fruit salad
- ½ mango
- 1 piece pineapple
- juice of half a lemon
- 2 tablespoons of shredded coconut
- a little vanilla powder
To prepare the vanilla whipped cream
- 300 gm liquid cream
- 60 grams mascarpone
- 1 teaspoon vanilla powder
- 15 grams powdered sugar
Heat the oven to 190 degrees Celsius.
In a bowl, put egg whites and sugar. Melt a little in the bain-marie before whisking quickly with an electric mixer. The result should be soft, firm, and smooth (the bird’s beak is on the tip of the whisk).
Add powdered sugar and grate some lemon peel. Place the piping bag.
On a baking sheet, place butter paper. Then form a disk with meringue. To do this, starting from the center, make a snail disc. Using the Saint-Honoré nozzle, make a crown around the disc.
Bake it for two hours.
Cut the mango and pineapple into small pieces, and put them in a salad bowl. Add lemon, coconut and vanilla powder and mix well. Fabulous book.
To prepare the whipped cream, whisk the mascarpone, liquid cream, icing sugar, and vanilla powder on medium speed with an electric mixer. Whipped cream has risen well when it has a nice, creamy consistency.
In the meringue crown, put the first layer of whipped cream. Put some fruit salad on top. Cover with the rest of the whipped cream, and boil it with a Saint-Honoré spout. Decorate with the rest of the fruit.
