  • 3 large eggs
  • 150g caster sugar (i.e. 1 egg white for 50g caster sugar)

Preparation

To get started, get your own pastry robot, electric mixer or, as I often say, a whisk and a little elbow grease.

Crack your eggs and place the whites in a bowl or urine bowl.
