Summer apricot tart – the classic recipe
- 1 puff pastry
- 700 grams of fresh or dried apricots
- 100 grams of sugar
- 100gm fresh cream
- 2 egg yolks
- 1 c. 1 tablespoon milk (beef or vegetable)
- 1 c. semolina coffee
- 1 c. Corn Starch
Spread the pie dough on the pie tray and prick it with a fork. Sprinkle the semolina mixed with a tablespoon of sugar and put the apricot kernels on it. Sprinkle with sugar. Beat egg yolks and scoop out a tablespoon. Moisten the edges of the pie with a little milk and egg yolk. Bake it at 180 ° C for 15 minutes. Meanwhile, mix the cream, yolks and cornstarch. Cover the fruit and sprinkle with sugar. Return to the oven for another 15 minutes.

Super easy almond and apricot tart
- 1 kilo of fresh or frozen apricots
- 200g puff pastry
- 150 grams fine sugar
- 5 c. ground almonds
- 1 c. vanilla extract
- 2 eggs
- 200 ml fresh liquid cream
Heat the oven to 210°C. Grease a pie pan with butter and roll out the dough. Then put the apricots, wash and cut in half in advance. Bake for 10 minutes. Meanwhile, mix eggs, sugar, vanilla extract, almond powder, and fresh cream. Remove the cake from the oven and pour the almond mixture over it. Bake for 20 minutes. Leave it to cool before untying the tart. Enjoy a scoop of homemade ice cream.
Easy and light apricot crumble
What do you do with slightly ripe fruits in summer? Crumble of course! Here’s our version with juicy apricots!
- 500 grams apricot
- 100g cold salted butter, cut into cubes
- 150 grams of flour
- 1 teaspoon vanilla
- 120 grams fine sugar
- 40 grams of oats
Start by preheating the oven to 180°C. Wash the apricots and cut them in half, then evenly distribute them in a pie plate or baking dish and sprinkle with sugar. Mix the butter and flour together until you get the consistency of breadcrumbs. Add the vanilla, remaining sugar, and oats to make a lumpy, crumbly mixture. Pour the breadcrumbs over the apricots. To evaporate the juice, put the dish on a baking sheet and bake for 45 minutes. If it starts to brown too quickly, cover the cake with tin foil. Serve your girl with ice cream or homemade custard.

Summer tiramisu with apricots and pistachios
Ingredients for 4 people:
- 50 g. pistachio
- 1 can apricot in syrup
- 3 eggs
- 80 grams of sugar
- 250gm mascarpone
- Dried lavender flowers for decoration
Drain the apricots and cut them into quarters. Separate the egg whites from the yolks and beat the latter with sugar until the mixture turns white. Add the mascarpone and apricot syrup, then the beaten egg whites. At the bottom of the vine, put a little chopped pistachios, add apricot pieces and cover with mascarpone. Refrigerate for 12 hours and garnish with pistachios and dried lavender flowers before serving.
