French toast recipe from our childhood by Philippe Echebest

Ingredients:
2 egg yolks
30 grams fine sugar
20 cl of liquid cream
2 cl of milk
5 slices of stale bread
1 tbsp. Brown sugar
20 grams butter

Preparation :

Before starting, preheat the oven to 170°C.

Separate the yolk from the egg white.
Chef’s Tip: Keep the eggs aside to make another dessert, such as a meringue.

Add sugar and yolk yolks with whisk.
Add cream and milk and continue to whisk vigorously.

Bread cut.
Chef’s tip: You can use the bread of your choice (baguette, white bread, etc.) and even brioche. However, avoid black bread or rye bread.

Keep the entire slice or breadcrumbs cut out with a cookie cutter like a chef. If you cut up the crumbs, remember to keep them so you don’t waste anything. You can then dry the bread and make homemade breadcrumbs.

If cut into crumbs, butter ramekins. Add a ladle of the prepared mixture to its bottom and place the slices of bread on top. Cover the device again. Let the bread absorb the liquid.
Chef’s Tip: It’s best to prepare the bread the day before for more flavor.

Then bake for 15 minutes at 170 ° C.

Take the ramekin out of the oven. The ideal is to let it cool before caramelizing it.

Get a frying pan and melt the butter.

Add sugar and leave it like caramel. The pan should not be too hot.

Meanwhile, loosen the French toast with a knife. Then add it to the pan when the melted butter/sugar mixture has a nice golden color.

Cook the bread slices on both sides until nicely caramelized.

Arrange on a plate and immediately enjoy a little whipped cream, for example.
