Consisting of tomato, mozzarella, flavored with sweet herbs, and stale bread, it is Great recipe for anti-waste and economical ! Ingredients for 6 people
- 1 kg fairly hard tomatoes
- 4 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 red onions
- 1 bunch fresh basil
- 1 cucumber
- 200g old country bread, lightly toasted on the grill
Cut the tomatoes into fairly large quarters and drain them in a colander. Cut the onions into thin rings, and the peeled cucumbers into cubes.
Mix tomatoes, onions and cucumbers in a salad bowl. Add the toasted bread cut into pieces and the chopped basil leaves.
Salt the salad, sprinkle with olive oil and vinegar, and carefully stir in the panzanella. Refrigerate for an hour and then serve chilled.
