Ingredients for 4 people:

  • 1 cucumber – unpeeled
  • 800gm natural full fat greek yogurt
  • 4 large garlic cloves – finely chopped
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons of white vinegar
  • 1 teaspoon salt
  • 2 tablespoons chopped fresh dill

Prepare :

  1. Grate the cucumbers and drain them in a fine mesh strainer or cheesecloth. Squeeze it gently to extract more liquid.
  2. Combine yogurt, garlic, oil, vinegar, and salt in a large bowl. Cover it and put it in the fridge overnight.

Thermomix Greek tzatziki recipe

A quick and easy recipe to prepare the day before

Ingredients for 4 people:

  • 1 cucumber
  • 500g 10% whole greek yogurt
  • 3 garlic cloves
  • 1 tablespoon of white wine vinegar
  • 1 tablespoon olive oil
  • Salt and Pepper

Prepare :

  1. Peel the cucumber, cut it into pieces, put it in the bowl of a blender and mash with the spoon for 5 seconds at speed 5.
  2. Put the cucumbers in a colander, salt them and let them dry for 10 minutes.
  3. Put the garlic cloves in a mixing bowl and chop for 5 seconds / speed 8.
  4. Squeeze the cucumber well and add it to the bowl with the other ingredients.
  5. Mix everything well for 10 seconds / speed 3.

Tzatziki vegetarian

Ingredients :

  • 1 cucumber
  • 2 tablespoons chickpea flour
  • 60g cashews soaked overnight
  • 2 small garlic cloves
  • 2 tablespoons lemon juice
  • 2 teaspoons of apple cider vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon dried mint
  • Salt and white pepper to taste

Prepare :

  1. Grate the cucumber coarsely. If this is your organic produce, there is no need to peel it.
  2. Squeeze the water from the cucumber using cheesecloth or a fine sieve and spoon to squeeze out the grated cucumber. Save water, it will come in handy later.
  3. Put the chickpea flour and 6 tablespoons of water in a small saucepan. Cook over medium-low heat, stirring constantly, until it turns into a thick roux. It takes about 5 minutes.
  4. Drain the cashews and chop them coarsely. Divide them into 4 parts. This step blends the cashews without adding much liquid.
  5. Put lemon juice, cucumber juice, and olive oil in the bottom of the blender. Add part of the chopped cashews and blend until smooth.
    Then add another portion of cashews and repeat the process. Continue in the same manner with the remaining two portions of the walnut.
  6. Finally, add the chickpea roux and mix well.
  7. Season with raw garlic, salt, pepper, dry mint and a little apple cider vinegar to increase acidity.
  8. Transfer the sauce to a bowl and stir in the grated cucumber. Place in the refrigerator for about 3-4 hours to allow the dip to thicken.
