Recipe ingredients

  • 1 tablespoon olive oil
  • 1 onion
  • 1 red pepper
  • 2 cloves of garlic

  • 1 teaspoon turmeric
  • 150 grams of rice
  • 50 cl vegetable broth
  • 1 can (400 g) chickpeas
  • 1 can (400 g) chopped tomatoes
  • 1 zucchini
  • Half a head of broccoli
  • 1/4 head of cauliflower
  • A handful of green beans
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

In fact, there are many ingredients in the program of this recipe, but apart from rice, spices, chickpeas and tomatoes, the rest is optional and you can also substitute certain ingredients or add others, such as eggplant cubes.

Preparing the paella plant

First, heat the oil in a large frying pan or skillet. Then add the onion and garlic and cook for a few minutes until softened and colored without burning.

  1. Add paprika and continue cooking for a few minutes.
  2. Then add the rice and spices (paprika, turmeric, salt and pepper) and stir until the rice is covered with spices. Add chickpeas and chopped tomatoes and stir.
  3. Add vegetable broth and bring to a boil. Then reduce the heat and simmer for 20 minutes, stirring occasionally.
  4. After 20 minutes, add the vegetables (zucchini, broccoli, cauliflower, green beans) and cook for a few minutes until softened.
  5. Once the rice is cooked and the vegetables are tender, remove from the heat and leave for a few minutes. Serve hot and enjoy!
