Cyril Lignac’s Christmas Tree Recipe

  • Chocolate Roll Cake Ingredients:

3 organic eggs
4 organic egg whites + 2 organic egg yolks
85 g + 135 g fine sugar
85 grams of flour
50gm cocoa powder
butter for dish

  • Mascarpone Whipped Cream Ingredients:

125g mascarpone
25 cl of complete liquid cream 35% fat, very cold
65g fine sugar
1 vanilla bean

  • Decoration Ingredients:

3 tablespoons. cherry jam
2 tbsp. tablespoons of amarina cherries in syrup
40gm grated dark chocolate

Heat the oven to 210°C.

In a salad bowl, whisk egg whites with 85 g of sugar until they form a bird’s beak. Then, in another bowl, whisk the yolks with the whole eggs and 135g of ribbon sugar, add the flour and cocoa powder to the Marys. Gently mix the two devices. Pour into a buttered silicone-coated baking sheet or onto a silicone baking sheet set on a baking sheet. Gently spread the biscuits to make the biscuits even using an angled spatula. Bake for 7 minutes.

Cover the biscuit with cherry jam, then whipped cream with mascarpone, add a little amarina cherry. Roll the biscuit without mashing and put it in a plate.
